Summertime for me meant reveling in the abundance of fresh berries and fruits of all kinds. During those carefree summer breaks, I have the fondest memories of grabbing my trusty fruit bucket and heading out to gather ripe berries from our yard. We’d even venture into the woods, hunting for those wonderful gifts of nature. The days were hot, and our little fingers would get delightfully sticky from the sweetness of the berries we picked. It never took long to find more berries in the woods. We’d spend the entire day picking and munching until our truck was brimming with fresh, sun-kissed, ripe berries. And as a perfect end to our berry-picking adventures, Dad always knew just where to find a clear, cold creek for a refreshing swim to wash off the stickiness. There, we would rinse the berries thoroughly so Mom could start preparing them for the freezer as soon as we got home.

I spent countless summer days watching and helping my mom expertly wash, dry, and measure all kinds of fruits and berries. She had a system: two cups of berries went into each quart-sized bag, followed by ½ cup of sugar before sealing and labeling them and placing them in the freezer. This way, she always had the perfect amount of berries ready for any recipe she wanted to whip up. I still cherish and use her method today. What method I use today depends on how I plan to use my berries. Just know I also use the “Flash Freeze” method to ensure they stay fresh and ready for any culinary creation I may crave.

  4. Line a baking sheet (one that will fit in your freezer) with wax paper. If you have large strawberries cut them in half and place cut side down on wax paper. Spread them out. Do not allow strawberries to overlap or touch each other,
  5. Put the baking sheet of strawberries uncovered in the freezer.  Flash freezing will take about 6 hours.
  6. Once flash freezing is finished, transfer strawberries to a freezer bag or an air-tight container.

Flash freezing with the above technique prevents the strawberries from sticking together and becoming a frozen cluster.

How Long Do Frozen Strawberries Last?

Strawberries should retain their peak flavor for around six months. After that they are still good to eat, just realize that the taste starts deteriorating. Also, be aware that once strawberries start to thaw, they won’t have the same texture as they did before freezing them. However, don’t be discouraged from using them in recipes where they are mashed up or cooked down.  These are the strawberries you use for smoothies and other frozen drinks.  They also make great sauces for ice cream and pound cakes.

Is it necessary to wash blueberries before freezing them? Actually, no it is not because blueberries have a natural waxy coating on them. I prefer to wash mine, but whether you wash them or not, it is important to make sure the blueberries are dry before freezing.

Be sure to start with clean, dry, whole blueberries. Line a baking sheet with wax paper and spread the blueberries out on the pan. Place the baking sheet in the freezer for 4-5 hours or overnight. It’s important for the blueberries to be completely dry to prevent them from clumping when frozen. Using resealable freezer bags, transfer blueberries to the bag, making sure to label and date.
