The only drawback is that the enamel coating can chip, but since I don’t use it as regularly as I do my original cast iron cookware, it has not presented a problem yet.

Delicate Fish: Flaky fish like tilapia or flounder may stick to the pan, even if it’s well-seasoned. Consider using a non-stick skillet or stainless steel pan for these dishes. To clarify this further, don’t sear these delicate fish in a cast iron skill.

The one and only food I will not cook in a cast iron skillet is scrambled eggs. Plenty of cooks do successfully with an extremely well-seasoned pan, but I have not mastered it yet.
