Banana Walnut Pound Cake

Ingredients

  • 2 ½ cups sugar
  • ¾ cup butter 1 & 1/2 sticks
  • 3 large eggs
  • 1 ½ tsp vanilla
  • 4 very ripe bananas
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¾ tsp salt
  • cup sour cream
  • 1 cup chopped walnuts

  • Preheat the oven to 350-degrees Fahrenheit.
    Butter & sugar a 12 cup tube pan.
    In a large bowl, cream together the sugar and butter until light and fluffy.  Add eggs one at a time, beating well after each addition.  Add the vanilla and mashed bananas, and mix well.
    In another bowl, stir together the dry ingredients: flour, baking soda, baking powder, and salt.  Mix all the dry ingredients until blended well.
    Mix the dry ingredients into the banana mixture, alternating the flour mixture and the sour cream.  Mix well after each addition.  Add chopped nuts and mix well. Pour the batter into the prepared pan. Place in a 350-degree Fahrenheit oven and bake for 15 minites. Reduce oven temperature to 325 degrees Fahrenheit and bake for an additional 45-60 minutes. Every oven bakes differently, so it is recommended that you do a doneness test by inserting a cake tester or a toothpick in the center of the cake, when it comes out clean, your cake is done.  Let the cake cool for 10–15 minutes in the cake pan on a cooling rack, then invert onto a cooling rack. Let the cake completely cool before plating.
