<p>Choose young, firm cucumbers with thin skin, such as Kirby or English cucumbers, for a crisp texture. A note about peeling cucumbers: I usually peel my fresh garden cucumbers only partially. A visual thing for me, I suppose; however, if you are buying store-bought cucumbers, they are waxed.
