- 6 large eggs
- ¼ cup mayonnaise
- 1 ½ tbsp sweet pickle relish (or dill relish or a mix of both)
- ⅛ tsp salt
- 1 dash black pepper
- shake Paprika ( for garnishing)
Slice eggs in half lengthwise, and carefully remove the yolks.
Place the yolks in a bowl and add mayonnaise. Mash the two together until smooth. The mixture should have a creamy texture that is not too runny or stiff.
Add the relish, salt, and pepper and mix well. Again a creamy not runny texture.
Spoon the mixture into each egg white half. The mixture should go in easy and keep its shape.
Garnish with Paprika. You can get as creative as you like with garnishing. So go for it!
