Easy Savory Cabbage Cake

Ingredients

  • 12 ounces chopped green cabbage
  • 3 tbsp olive oil
  • 1 large onion (finely chopped)
  • 3 cloves garlic (crushed)
  • ¼ bunch chopped parsley ½ to ¾ cup chopped
  • 11 ounces Greek yogurt (plain)
  • 3 large eggs
  • cups all-purpose flour
  • ½ tsp baking soda
  • tsp baking powder
  • tsp salt
  • ½ tsp ground black pepper
  • ½ tsp mustard powder
  • 1 tsp thyme
  • 1 tsp oregano

Instructions

  • Preheat Oven to 350℉. Line a 9-inch springform pan with parchment paper, including the sides. Lightly grease and set aside.
  • Prepare Cabbage: Finely chop the cabbage and place it into a large mixing bowl.
  • Saute Onions and Garlic: Heat the 3 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook about 5 minutes until soft. Stir in the crushed garlic and cook another minute or two. Remove from heat and immediately add to the bowl of chopped cabbage. Add the chopped parsley and mix thoroughly.
  • Cake Batter: In a medium mixing bowl, whisk together the eggs and yogurt. Add flour, baking powder, baking soda, salt, black pepper, mustard powder, oregano, and thyme.
  • Combine: Add the batter to the cabbage mixture and stir until completely combined.
  • Bake: Pour the mixture into the prepared springform pan and spread evenly. Bake for about 40-45 Minutes, or until the top is golden brown. Insert a toothpick in the center of the cake. If the toothpick comes out clean, it is done.
  • Serve: Release the springform and place the cake on a cooling rack. Allow it to cool slightly before slicing. Enjoy this cake warm or at room temperature. Serve with a Ranch or Dill sauce, or just eat plain.

May I suggest you try shaking sesame seeds or bagel-everything seasoning over the top of the cake before sliding it into the oven. Another trick I like is to pull the cake from the oven the last 5 minutes or so before it has finished baking, drizzle with melted butter, and slide it back into the oven for a gorgeous golden-brown color.
