Pepperoni Pizza Monkey Bread

Ingredients

  • 2 - 16 oz. cans flaky biscuits
  • 3 cups marinara sauce
  • 64 slices pepperoni
  • 2 cups mozzarella cheese shredded
  • ¼ cup olive oil
  • 1 tbsp dried oregano
  • ½ cup grated parmasan cheese
  • 2 tbsp fresh parsley, chopped for garnish

Instructions

Prep:

  • Preheat oven 350℉. Grease a bundt pan with non-stick spray and set aside.

Assembly:

  • Open the 2 cans of biscuits and cut each one in half. Roll gently into a ball and flatten each one to approx. a 2 inch round circle.
  • Top each one with 1/2 tsp of marinara sauce, 2 slices of pepperoni, and 1 tsp of mozzarella cheese. Pinch the dough together, sealing the filling inside, then roll it into a ball. Repeat until all the dough is filled and rolled into a ball.
  • In a small mixing bowl, combine the olive oil and oregano. Reserve enough olive oil to brush the tops of the pizza balls after baking.
  • Arrange a layer of pizza balls in the bottom of the prepared bundt pan and top with 1/3 of the remaining mozzarella cheese.
  • Drizzle some of the olive oil over the first layer of pizza balls. Arrange another layer of the pizza balls, top with mozzarella cheese, and drizzle with olive oil. Continue layering until you have used all the pizza balls.
  • Bake in a preheated oven for 30-35 minutes until golden brown and cheese is bubbling. Once done, remove from the oven, let pan sit for 3 minutes, then invert onto a platter, brush with the reserved olive oil, sprinkle with parmesan, and serve with marinara sauce for dipping.
