Savory Cheese Pecan Coated Truffles

  • Place the first five ingredients in a medium mixing bowl mixing until well combined. Adjust salt to taste at this time.
  • Make the truffles: measure out 1 tbsp of filling using a small cookie scoop or melon baller and place on a parchment paper lined cookie sheet. You should have 18 tablespoon-sized balls. Once you have scooped all the balls use your hands to roll into a uniform ball. Place in the refrigerator for 3-4 hours
  • Remove cheese truffles from the fridge and let set for 15 minutes at room temperature.
  • In a small mixing bowl add 1 cup of finely chopped pecans. Roll each truffle in the bowl of chopped pecans until evenly coated. Place on your serving dish. They are ready to serve. Place back in the fridge if serving later. Remove 15 minutes before serving allowing them to come to room temperature so they will be spreadable.

This recipe is highly adaptable, allowing you to tailor it to your personal taste. You can choose from a variety of additional coatings, such as fresh chopped herbs, nuts like walnuts or almonds, cranberries, crushed crackers, sesame seeds, or even parmesan cheese.
