Instructions
Slice the tomato into 1/2-inch thick slices and place them on a paper towel to drain excess juices while you prepare the bread slices.
Spread 1 1/2 tablespoons of mayonnaise on one side of each slice of bread. Place the slices on a plate with the mayo side facing up. Arrange tomato slices to cover one slice of bread. Season the tomatoes with salt and pepper, then top with the remaining slice of bread.
Enjoy Immediately. Do not allow the sandwich to become soggy.
This sandwich pairs wonderfully with potato chips, pickles, light salad, fruit salad or potato salad.
Just add cooked bacon and lettuce for a great BLT (bacon, lettuce, and tomato sandwich)
