Ingredients
Rice Vinegar Dressing

rice vinegar

water

sugar (can swap equal measure of Splenda)
½
tsp
garlic salt
¼
cup
extra virgin olive oil
Salad

cucumbers (peeled and thinly sliced)
½
small
red onion or onion of choice (thinly sliced)

ripe tomatoes (washed, dried and sliced)
Instructions
Prepare the vinaigrette by combining all dressing ingredients in a small jar with a lid. Shake well to combine and adjust seasoning to taste.
Combine salad ingredients. Gently combine the sliced tomatoes, cucumbers, and red onion.
Toss the salad ingredients with the vinaigrette and refrigerate until ready to serve.
Serve with toasted garlic bread.
