History of Peanut Butter
The history of peanut butter is as rich and textured as the creamy spread itself. Originating in the late 19th century, peanut butter was first developed by a doctor seeking a nutritious protein substitute for his patients. Peanuts, native to South America, had long been valued for their robust flavor and nutritional benefits. The Aztecs and Incas were known to crush peanuts into a paste, but it wasn’t until the advent of modern machinery that peanut butter as we know it came to be.
In 1895, Dr. John Harvey Kellogg, a pioneer in health food, patented a process for creating peanut butter from steamed peanuts. This spread gained popularity at the 1904 World’s Fair, where it was introduced to a broader audience. Its convenience and delightful taste made it a household staple in America. Over time, peanut butter has evolved, with various textures and flavors, including the irresistible combination of peanut butter and chocolate. The union of peanut butter and chocolate has since become legendary, creating iconic treats like peanut butter cups. This delectable duo continues to delight taste buds and is a testament to the versatility and enduring appeal of peanut butter throughout history.
Health Benefits of Peanut Butter
Peanut butter is not only delicious but also packed with incredible health benefits. It is loaded with protein, healthy fats, and essential vitamins and minerals, making it a nutritious addition to your diet. Peanut butter is an excellent source of vitamin E, magnesium, and potassium, which are vital for maintaining healthy bodily functions. The healthy fats found in peanut butter, primarily monounsaturated and polyunsaturated fats, can help reduce bad cholesterol levels and support heart health. Additionally, the protein content makes it a great option for those looking to build muscle or maintain energy levels throughout the day. Including peanut butter in your meals can also contribute to a feeling of fullness, helping to manage hunger and promote weight control.

Growing up, my entire family adored No-Bake Chocolate Peanut Butter Cookies. With simple ingredients and an easy recipe, they quickly became a household favorite. They were the very first cookies I learned to make, watching my mom whip them up over and over again. We fondly named them Preacher Cookies because Mom always made them when the preacher and his wife were coming by for a visit. I still make those beloved no-bake chocolate peanut butter cookies, but now I have another version: a strictly No-Bake Peanut Butter Cookie that I’m excited to share with you. I know you’ll love them just as much as we do!
No-Bake Peanut Butter Cookies
Ingredients
- ½ cup butter (unsalted and cubed)
- 1 ¾ cup granulated sugar
- ½ cup milk ( I prefer to use evaporated milk)
- ¾ cup creamy peanut butter
- 1 tsp vanilla extract
- 3 ¼ cup quick-cooking oats
Instructions
- Gather and measure all ingredients.
- Line 2 large cookie sheets with parchment or wax paper. My countertops are heat-resistant, so I line them instead. Less cleanup.
- Place the butter, sugar, and milk in a saucepan and heat over medium heat on the stovetop. Stir often, making sure that the mixture melts and blends and does not stick. Bring the mixture to a rolling boil. It should be bubbling vigorously. Once you see nothing but rolling bubbles, continue stirring and quickly set a timer for 60 seconds.
- When the timer goes off, remove from the heat and stir in the peanut butter and the vanilla extract. Mix well until all the ingredients are blended well. Immediately add the quick-cook oats and stir until the oats are covered with peanut butter mixture.
- Drop spoonfuls of the mixture onto the lined cookie sheets or countertops. I will use a tablespoon to scoop each cookie, then slide the cookie off with a teaspoon and spread each cookie out a little as I go along. Remember the mixture is still hot. You will need to do this process as quickly as possible before the mixture firms up.
- Allow the cookies to cool for about 45-60 minutes to completely firm up. If the cookies have not firmed up after an hour, let them continue to sit out a while longer, and they will firm up.
- Once cookies are cool and have firmed up, carefully peel them from the parchment or wax paper and store them in an air-tight container. Cookies can last in an air-tight container at room temperature for about a week.
